8 oz. Reduced Fat Ricotta Cheese
2 cups blueberries
2 cups fat-free milk
1/3 maple syrup
1 cup water
2 tbsp cornstarch
1 tsp butter


How Do I Make Blueberry Strata?

Here is how you make Blueberry Strata:

Cut bread into 1 inch cubes. Place half of the cubes in a greased 9 x 13 inch baking pan. Sprinkle ricotta cheese on top of bread cubes. Top with 1 cup blueberries and remaining bread. In a large bowl, beat together eggs, milk and maple syrup. Pour mixture over bread. Cover and refrigerate overnight.The next morning, remove pan from fridge 30 minutes before baking (a little longer if it's a particularly cold morning). Preheat oven to 350 degrees. Cover pan with foil and bake for 30 minutes. Uncover and bake another 30 minutes, until golden brown and center is set.To make sauce: In a saucepan, combine sugar and cornstarch, add water. Boil over medium heat for 3 minutes, stirring constantly. Stir in blueberries and reduce heat. Simmer 8-10 minutes, or until berries have burst. (If you use fresh, it will be shorter than if you use frozen.) Stir in butter until melted.
