3 tbsp grass-fed butter or ghee
5 eggs
3/4 cup almond milk
1/4 cup coconut flour
1/4 cup tapioca flout
1/4 tsp salt
1/4 tsp vanilla extact
1/4 tsp ground cinnamon
1 (15 oz can peaches in juice
1/2 cup frozen wild blueberries
Raw honey or organic maple syrup for drizzling (optional)


How Do I Make Blueberry Peach Popovers (Paleo approved)?

Here is how you make Blueberry Peach Popovers (Paleo approved):

Preheat oven to 425 - place 1/2 TBSP butter in each of 6 ramekins or popover pan. Place in oven to just melt butter on a cookie sheet. Mix all other ingredients while butter is melting (careful not to burn). Remove pan/ramekins (careful all is hot). Place three peach slices on top of butter and then about 1 TBSP of blueberries on top of peaches. Pour flour mixture on top of each - about 3/8 cup in each. Bake for 18 - 22 minutes until top is golden brown. Remove from oven and let rest for 5 minutes. If in ramekins just serve it up but again be careful its hot. If in a popover pan remove from pan and serve.
