1 3/4 cup all- purpose flour or bread flour. (I've made it with both)
4 teaspoons baking powder
1/4 cup sugar
1/8 teaspoon salt
5 tablespoons unsalted butter
1/2 cup fresh or frozen blueberries
1/2 cup skim milk
1/4 cup plain low fat yogurt (vanilla yogurt optional)
1 egg (for egg wash optional)
1 tablespoon skim milk(for egg wash optional)


How Do I Make "The Best" Blueberry Scones?

Here is how you make "The Best" Blueberry Scones:

1. Preheat oven to 400 degrees.2. Sift flour, baking powder, sugar and salt into a large bowl. Cut in butter with a pastry blender until it is pea sized lumps. Stir in blueberries gently. Mix together 1/2 cup skim milk and 1/4 cup of plain yogurt in a measuring cup. Pour all at once into the dry ingredients and gently stir until well blended. Don't over work the dough. The dough should not look wet. You will actually think it might be too dry but as long as it willl hold its shape when formed into a ball it is fine.3. With floured hands pat scone dough into balls 2 to 3 inches across, depending on the size you want. Place onto a greased baking sheet, leave about 2 inches in between each dough ball. Brush the tops with a mixture of 1 egg and 1 tablespoon of skim milk wisked together (this is optional).3. Bake for 10 to 15 minutes in the preheated oven until the tops are light golden brown.
