I saw a recipe for one with cranberries and orange zest or peal and love nuts. I searched for other crockpot recipes and couldn't find exactly what I wanted. I found plenty of pumpkin bread recipes and some that had whole wheat and used cranberries. I adjusted the sugar and this is what I came up with and it tastes pretty good. 1 oz is a small serving but if you pair it with other things for breakfast it's alright, besides the nutritions is great so you can eat more anyway!

-1 C granulated sugar
-1 t ground cinnamon
-1 t ground nutmeg

-2 egg whites egg beaters (6 T)
-1 C unsweetened applesauce
-15 oz or 1 can pumpkin
-1/4 C water

-1/2 C chopped walnuts or about 65g
-1 C craisins measured then chopped

Here is how you make Rumbamel's Crockpot Pumpkin Walnut/Cranberry Bread:

--Chop the cranberries(craisins), measure the walnuts and set aside in a bowl together. --Measure and mix all the other dry ingredients in a large bowl, then in another medium bowl mix the wet ingredients until blended then add them to the dry ones. Stir until well moistened.--Pour in the bowl of nuts and craisins and stir until evenly mixed. Pour into a lightly sprayed crockpot, cover and cook on high for 2 1/4 -2 1/2 hrs or until a knife in the center comes out mostly clean. You want to watch so the sides aren't burning during this time, though.--When done, loosen the sides and bottom with a flexible spoon or spatula and turn out onto a rack to cool completely.
