I modified this recipe using half whole wheat and half white flour, half sugar and half splenda. The original recipe was by Diane Beer my Girl Scout Leader, my mothers friend, and beloved member of our church and community. She passed away a few years back from reoccurring breast cancer, she lost her battle the second time, but left us with so many fond memories and gifts like this recipe.

Preheat oven to 325 degrees. Grease 2 large loaf pans. Mix eggs, sugar, oil, and vanilla:set aside. In a separate bowl, sift together flour, baking soda, baking powder, salt, and cinnamon. Add to first mixture. Fold in shredded zucchini. Pour into greased loaf pans and bake 1 hour.Serving Size:?makes 2 loaves cut into 8 pieces amking 16 slices
