1 package of Butterball everday Italian Sausage (2 links)choped into 1/4in. cubes
1 small onion sliced thin, (not diced)
1 med. red bell pepper sliced thin. (I used some I pre-sliced and had frozen.
2 cups of frozen chopped spinach
3 cups of egg beaters ( I use the Krogers brand generic egg betters)
1/2 a cup of low fat 4cheese blend. (10grams/omelet)
a couple of shakes of paprika
a couple of shakes of Mr. Dash Table Blend
1. tsp garlic powder

Here is how you make Tennessee Poor Boy's Breakfast Omelet:

1. In a frying pan season Sausage with paprika, Mr. Dash, and garlic powder, then brown over med. high heat for about 5 min.2. Add sliced onion, Peppers, and frozen spinach, cook for about 5-6 more min. till the spinach is soft.3. Remove from heat and pour into a strainer to drain any fats, oils, etc. 4. Get your scales out and portion 2.5oz servings from the strainer you should come up with 6 servings. I Did.5. Now in a clean frying pan sprayed with olive oil, add 1/2 cup of egg substitute over med heat.6. When its half way cooked about 1-2min. pour 1 of your sausage mixtures on half and sprinkle with 10grams of cheese (3 finger pinch).7.
