Melt butter & saute onion until clear. Add rest of vegetables & saute for 1 minute. Add 2 pints chicken stock & rest of ingredients. Bring to boil & simmer 1/2 hour or until tender. Remove bay leaf then blend the soup. Reheat & serve.
