Here is how you make Healthy Brunch Egg Casserole:

Melt the butter in a deep sided fry pan (or dutch oven); add the onions. Saut? until translucent. Add the diced mushrooms, and diced canadian bacon, and stir into the onions. Add the flour, stir and cook on medium/high heat for 1 minute. Add the milk and cook until thickened. Add salt, pepper and ? cup cheese, and the egg substitute. Heat through. Pour into a large buttered casserole dish. Bake for 30 minutes, or until set.
