1. Preheat cover to 3752. Spray skillet with oil & put on medium heat. Add onion, red bell pepper, season with salt & pepper. Cook about 3 minutes. Transfer to large mixing bowl.3. Add ground chicken (sausage) to skillet & cook until browned, about 5 minutes, crumbling sausage with spoon as it cooks. Transfer to the large mixing bowl.4. Add cubed sweet potatoes to skillet, drizzle with a little olive oil, and cover with a lid. Let it cook for 8-10 minutes, stirring occasionally, until tender. Transfer to the large mixing bowl.5.
