Skim milk, 2 cups
Egg substitute, liquid (Egg Beaters), 1 cup
Prepared Dijon Mustard, 3 tsp
Tabasco Sauce, 1/4 tsp
Oregano, Dried (1 tsp)
Basil, fresh, 1/8- 1/4 cup
Canadian Bacon, 3 slices

Here is how you make Karen's Bacon, Tomato and Cheese Brunch Casserole:

Slice tomatoes and chop onions.Fry the bacon in a frying pan and add the onions , cooking until softened. Drain bacon and crumble into small pieces. Remove excess oil from onions.Spray a 13'x9" baking dish with olive oil-flavoured Pam or other cooking spray. Put half of the bread into the dish. Sprinkle one-third of the cheese over the bread. Add half the tomato slices. Repeat the layer and top with the remaining cheese.Combine the cooked onion, skim milk, egg substitute and dried spices. Pour this over the bread mixture and refrigerate, covered, for at least one hour (you can also prepare this the night before and pop it into the oven in the morning).When ready to bake, sprinkle the top with fresh basil and bake in a 350F oven for one hour.
