Spread one can of crescent roll dough in a greased 9" x 13" pan. Press perforations together to seal. Combine cream cheese, sugar, egg, and vanilla. Spread on top of the crescent rolls. Spoon pie filling over the cheese mixture. Lay the second can of rolls on top of the pie filling. If desired, brush top with egg white to secure a mixture of sugar and nuts for the topping.
