Here is how you make Egg-Spinach-Cheese Bake:

Saute' onion and mushroom in 1 tsb refined coconut oil. Add fresh spinach and cook down.Beat eggs, egg whites and salt and pepper to taste with 2 tbs of Greek yogurt. Pour over onion/mushroom/spinach mixture and spread evenly. Place the slices of veggie cheese on top of mixture. Cook on medium heat until eggs begin to set. Transfer frying pan into pre-heated over and bake for 10-15 minutes at 350.
