6 eggs
2 Tablespoons vanilla extract

TOPPING
16 ounces lite sour cream
4 Tablespoons truvia
1 Tablespoon vanilla extract

Here is how you make GF Cheesecake : dessert, snack or meal:

1. CRUST: Mix nuts, raisins and cinnamon in food processor until well mixed and forming a soft ball. Pat firmly into the bottom of a spring form pan, or a 9x13 pan.2. FILLING: Mix cheese and truvia together. Add eggs and vanilla. Pour on top of nut crust and bake 350 degrees 1 hour.3. Remove from oven and let stand 15 minutes. The top of the crust will even itself out (leave it alone ;)4. Increase oven heat to 425 degrees.5. TOPPING: Mix sour cream 4 Tablespoons truvia and 1 Tablespoon vanilla extract together until it is well mixed and smooth.6. Spread sour cream mixture on top of cheesecake and bake at 475 degrees 15 minutes.7. Let cheesecake cool before slicing. Slice into 16 servings.8.
