These are excellent and gorgeous when served with caramelized apples, whipped topping and a sprinkling of coarse sugar. Try experimenting with syrup selections as well. Maple or buttery pancake syrup mix very well with the flavors. Other fruit compotes such as blueberry or cinnamon raising go very well, too. Enjoy!(This recipe was created when experimenting with nutrition plans which cut out cornstarch and white wheat flour. Arrowroot was used just to avoid the cornstarch in baking powder and certainly is not necessary for the recipe to be successful)

1 Tbsp. flax meal
2 tsp. arrowroot (or baking powder)
1/4 tsp. baking soda
1/2 ts.p salt
1/2 Tbsp. granulated sugar
1/2 Tbsp. brown sugar
1/16 tsp. (dash) ground nutmeg
1/16 tsp. (dash) allspice powder
1/2 tsp. cinnamon
1-1/4 c. skim milk
5 Tbsp. melted butter
1 Tbsp. vanilla extract
1-1/4 c. whole wheat flour
2 egg whites, whipped stiff

Here is how you make Cinnamon and Spice Whole Grain Waffles:

Place first 10 ingredients in large batter bowl. Stir together, and begin mixing on low with hand-held mixer on low while slowly adding the skim milk. Add in melted butter, and increase speed as mixture thickens. Stir in 1 c. of the flour, and then by the tablespoon until a full but not stiff batter consistency is reached. Depending on precise measurement of ingredients, altitude and density of the wheat flour, all of the flour may not be needed. Fold in egg whites. Cook in Belgian waffle iron until crisp and browned.(Recipe is originally prepared for 8 equal squares in a Krups family size Belgian waffle iron, my personal favorite. Waffles always come out the perfect texture and crispness in this iron.
