Soak freh cob in hot water to soften. Cut corn from cob (100g = 1 average cob from my garden). Mix in eggs, shallots, flour & cheese. Season to taste (I just use a good pinch of salt). Drop dessertspoonful of mix into heated olive oil. Fry lightly on both sides and drain between paper towel.Makes 8 (Most of the fat in this recipe comes from the olive oil.
