Wisk together wet ingredients, then add dry ingredients. Continue mixing until slightly frothy and well combined. Allow to chill in fridge for 30-120 minutes to allow air bubbles to escape batter.Heat a nonstick skillet on medium heat, spray with cooking spray. Remove skillet from heat and add batter, 1/4 cup at a time, to skillet, swirling pan to create a very thin layer of batter, then replace on heat. Heat for approximately one to two minutes, until golden brown. Loosen edges with a butter knife and flip crepe.
