2 thin style bagels, all natural
.5 oz of home made type cream cheese
2 pats of butter, unsalted
3 to 4 breakfast link sausages
1 tblsp flour
.5 cup of whole milk, approx.
3 jumbo eggs from pastured chickens.
1/4 cup shredded cheddar cheese
salt, pepper and Old Bay Seasoning to taste

Here is how you make Joanne's Southern Eggs Benedict:

Organic ingredients recommended. Start cooking breakfast sausages on medium, turning when needed. Whip eggs with a fork or whisk until blended and they hold air, aprox 1 minute. Add 1 pat butter to non stick skillet on very low. Saute eggs until scrambled lightly stirring constantly over low heat. Add shredded cheese to eggs. Lightly toast thin bagels. Spread with cream cheese. Place eggs on top. Cut up browned sausages and place on top of eggs. Drain sausage pan of extra grease. Add in pat of butter and flour and stir on low for one minute, being sure to count to 60, scraping up sausage bits and brownings. Stir in milk adding in a slow stream until gravy forms.
