Mix cinnamon and nutmeg and divide into two small bowls or large spoons. Sprinkle one portion of cinnamon/nutmeg mixture onto egg/soymilk mixture. Dip each slice of bread into raw mixture and coats both sides thoroughly. Cook on hot non-stick griddle or pan 2-3 minutes or until golden brown. Flip and cook other side.
