1/4 cup non-fat milk
1 small or medium white onion, finely diced
1 clove of garlic, smashed and thinly sliced
1 whole red bell pepper, diced
1 head of broccoli (1.5 cups, approx.) with stem, chopped
1 cup fresh (NOT CANNED) asparagus, cut into 1 inch pieces
1-1.5 cups ham, diced
1 potato, cut into 1/2 inch pieces
1/2 cup shiitake mushrooms, chopped
1/2 Tbsp canola oil
Herbs de Provance (or other seasoning), to taste
Fresh cracked black pepper, to taste
Smoked paprika, to taste

Here is how you make Extra Hearty Frittata:

Preheat oven to 350 degrees.Whisk whole eggs and egg whites with milk- Blend in a blender for fluffier frittatta.Prep veggies.Cut potatoes and boil, cook until just tender. They can be slightly underdone as they will finish cooking in the oven.Put 1/2 Tbsp canola oil into an enameled cast iron dutch over or pan over medium high heat.Add onion, cooking over medium high heat until starting to brown. Add garlic and cook for 1-2 minutes.Add red pepper, cook 3-4 minutes or until it starts to become tender.Add asparagus, broccoli, potato, mushrooms and ham. Cook 1-2 minutes.Add eggs and seasonings. Cook on stove until the eggs just start to scramble- DO NOT COOK THROUGH COMPLETELY. Place in oven and cook for 30 minutes or until set/desired consistency. Serve immediately.Serving Size:?Makes 6 wedges- 1 wedge per serving.
