Balsamic Vinegar 1/4 tsp. granulated sugar How Do I Make Leek Tatin?Here is how you make Leek Tatin: Heat oven to 425 FSpread 1/2 tsp. of the olive oil in an 8x8 pan. Layer leek slices over bottom of the pan. Lay the potato slices to cover the leeks one at a time, just overlapping ; use two layers if necessary. Salt and pepper.Gently roll out the pastry until it is just large enough to come to the edge of the pan. Lay over potatoes.Bake for 20-25 minutes until pastry is lightly browned. Meanwhile, put Balsamic Vinegar in a small saucepan with the sugar. Heat on medium for about 4 minutes, until the vinegar makes a syrup. Whisk in the remaining 1/2 tsp. of olive oil. It will separate; that's okay.Remove the tatin from the oven. Invert on serving dish (or baking sheet) so that the leeks are at the top. Stir the balsamic vinegar, then immediately sprinkle over the leeks with a spoon.Cut into six servings.
