I make this to take to eat at work. It's hearty, which keeps me full for a longer time. I use the full egg, on all of the eggs, but you can make this dish much healthier by only using 2 whole egg and the rest egg whites or use egg substitute, depending on your taste and dietary needs (recipe nutritional value calculated using 2 eggs and 4 egg whites). Onions or other vegetables can be added to taste. Fat values are a little less since you drain the potatoes and mushrooms. Beware sodium content in store bought tortillas. This is also great without the tortillas. Better yet, make your own!

Here is how you make Kasey's Morning Scramble:

Dice potatoes and mushrooms into small slivers, approximately 1" long, and .25" wide.Heat a skillet. Add half of the butter spread and melt. Add potatoes. Cook until about halfway done, then add mushrooms. Cook until mushrooms are completely cooked (potatoes should be close to done if they aren't already). Be sure not to burn potatoes! Place in a plate covered in paper towels to drain.While draining the vegetables, beat eggs in a bowl. Add milk. Turn the heat back on and place the rest of the spread in the pan. Pour in the egg mixture and the turkey crumbles. When bottom of eggs start to cook, add vegetables. Cook all together, stirring almost constantly, until eggs are done.Serve on tortillas with a side of homemade salsa. Not high in fibre, but a great source of many vitamins and minerals.
