Preheat oven to 375 degrees. Mix first 3 ingredients, set aside. Mix egg yolks, apple sauce, coconut oil, stevia or monk fruit extract, and almond extract. Beat egg whites until soft peaks.Prepare muffin pan with papers and non-stick spray on top of papers. Now mix dry ingredients with wet ingredients until just barely mixed. Fold in beaten egg whites gently until barely mixed. Use 1/4 c to spoon into prepared muffin pan.
