1 cup whole wheat flour
1 cup oat flour (can be made by putting 1 cup
non-instant oats in a blender)
2 tsp baking soda
1 & 1/2 tsp Cinnamon
1 tsp ground cloves(my idea)
3/4 cup wheat germ
1/2 cup Splenda Granular?
9 TBSP Vanilla protien powder (soy or whey-I use
Designer Whey brand)
3/4 tsp salt
3/4 cup unsweetened applesauce
3/4 cup skim milk
4 large egg whites, beaten
2 cups carrots, shredded
1/2 cup raisins (My idea)

Here is how you make Eating For Life - Carrot Cake Muffins:

1). Preheat oven to 375 degrees.2). Line 12 muffin cups with foil liners. Lightly coatthe liners with butter-flavored cooking spray.3). In a large mixing bowl,sift together wheat flour,oat flour,baking soda,cloves and Cinnamon. Then addthe wheat germ,Splenda Granular?,protien powder, andsalt. Stir to combine.4). In another bowl, combine applesauce,skim milk andegg whites. Pour applesauce mixture into flourmixture. Stir just until all ingredients aremoistened(batter will be lumpy). Then, gently fold incarrots and raisins until evenly combined.5). Spoon the batter into the foil lined muffin cupsuntil each is almost full. Bake until golden and awooden toothpick inserted in the center of muffincomes out "clean", about 18 minutes.Makes 12 muffins.Note: These muffins can easily be stored in therefrigerator in an airtight container for 2 days orfrozen individually in Ziploc? freezer bags for up to2 months.Serving Size:?12 muffins
