This was one of my 1st non-smoothie recipes in the Vitamix so I made it pretty much "as is", except that I did my usual part whole wheat flour in the recipe. I also split the all raisins and put some cranberries in there, too. I think next time I will sub in some applesauce instead of the oil. It seemed just a bit dry and it will cut down on fat and calories, maybe.

-1 t ground cinnamon
-1 t Pumpkin pie spice

-50 g raisins
-50 g dried cranberries
-100g carrots
-2 eggs, large, I use Egglands Best
-3/4 C granulated sugar
-2/3 C canola oil (the recipe called for olive oil)

---Preheat oven to 350 degrees. Measure your flours, baking powder and seasoning in a medium bowl and set aside.---Measure out your carrots and put it in your Vitamix. Secure the lid with the tamper. Start on Variable 1 and slowly go up to Variable 6 for 6-7 seconds or until carrots are finely chopped. ---Remover the lid and tamper and add the sugar, egg and the oil. Cover again and turn on Variable 1 then slowly to Variable 5 for 30 seconds or until creamy and blended.---Add this creamy mix to your dry mix and fold in with the raisins. Scoop evenly in a lightly greased muffin tin or with papers.
