1 1/2 c AP flour
1/2 c white sugar
1/2 tsp salt
1 1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 c brown sugar
2 tsp baking powder
1/2 c skim milk
1/2 c canola oil

*note: the flaxseed is used as an egg replacer; if you cannot find flax, 1 egg would probably be fine (but I haven't tried it with this recipe yet, but it usually works :)).

Here is how you make Cinnamon Muffins:

Preheat oven to 375F. Beat sugars with oil. In a separate bowl, mix ground flaxseed with water and let sit 2-3 minutes. Add the flax, and all other ingredients, to the batter.Spray muffin tin, and spoon in batter. Each muffin cup should be 2/3 of the way full.Bake around 12 minutes, or until the toothpick test comes out clean.
