Here is how you make Gluten-free, Low-fat Orange Cranberry Muffins:

Blend all dry ingredients and orange zest/rind in a bowl. Make a "well" in the middle of dry mixture and add wet ingredients. Mix just until all ingredients are blended. Add Craisins. Bake in a non-stick muffin tin that has been sprayed with a cooking spray (i.e. Pam). Spoon even amounts of batter into muffin cups. Do not use paper liners, or the batter will stick fast to liner.
