Line muffin tin with paper liners, spray liners with nonstick spray. Set aside.In a large mixing bowl, combine rolled oats, brown sugar, baking powder, salt and cinnamon. Set aside.In another mixing bowl, combine eggs, applesauce, milk and vanilla and whisk thoroughly.Pour wet ingredients into dry ingredients and mix until JUST sticky throughout, add apples and craisins and mix in just slightly until mostly even. Overmixing makes flat tough muffins.Scoop batter into prepared muffin tin.Put all ingredients for Streusel in one bowl, mash together with a fork, adding more butter if needed. Add a few craisins to the mix, and sprinkle on top of muffins before they go in the oven.
