1 c. milk (or substitute)
Let sit at least one hour to soften oatmeal.

Preheat oven to 400.

Mix and add to oatmeal:
1 egg
1/2 c. applesauce, unsweetened
2 T. molasses

Mix, then fold into wet:
3/4 c. whole wheat flour
1/4 c. wheat bran
1 t. baking powder
1/2 t. baking soda
1/2 t. salt

Add:
1/2 c. dates, pitted & chopped
1/4 c. walnuts, shelled

Scoop into mini-muffin cups and bake 12-15 minutes. Makes 24.
