Heat oversafe skillet on stove over high heat. Add small amount of butter, oil, or cooking spray. Sautee onions, peppers, & mushrooms until onions are clear. Add scallions & bacon to heat through. Whisk eggs with small amount of water and add to pan. Pull sides of eggs to center tilting pan to move more egg to outside. Continue cooking until top off eggs are still soft but no longer able to be tilted. Turn off burner, add cheeses and chives to top of skillet.
