Add the oats and cook until toasted for about 3 minutes, stirring occasionally. Cool the oats in the pan for 3 minutes. Grind the toasted oats in a food processor until the consistency of whole-wheat flour.Heat a waffle iron according to manufacturer's directions.In a medium bowl, whisk together the toasted oat flour, all-purpose flour, truvia, baking powder, salt, and baking soda until combined. In a small bowl, whisk together the eggs and melted butter, and then add the buttermilk. Make a hole in the dry ingredient bowl and add the wet ingredients and stir until combined.Let the batter rest for 5 minutes. Do not touch or stir it.Ladle the reccomended amount of waffle batter into the hot iron (i.e. about 1/4 cup or so). Close the iron top and cook until the waffle is golden on both sides and can be removed from the iron.
