Preheat griddle or nonstick skillet to 375 F.2. Place all ingredients in a blender container. Blend on medium speed for 1 minute, scrap contents from sides of container, pulse another 15 seconds.3. Lightly spray griddle with cooking spray. Divide and ladle batter onto hot griddle (about 1/4 cup each). Cook until bubbles appear on top of pancakes and edges appear dry (about 2-3 minutes).
