Set aside.Place three egg whites in a small blender (such as a Magic Bullet). If you don't have one you can use a cup and a hand held blender. Add pepper and whip until it is quite foamy.Pour into heated pan. When it looks almost cooked through add the cheese mix to one half of the pan and then fold the other half of the eggs on top of the cheese mix (creating the traditional omlette look). Check the bottom and when it is lightly browned, gently flip the omlette over to brown the other side. (You may need two spatulas to flip it). Don't worry if it rips, it still cooks well and tastes great. ;) When the other side is lightly browned and no more liquid spills out around the edges, it is done.
