I found a pancake recipe for rolled oat pancakes in a recipe book from the 20's. I loved the idea of oatmeal pancakes so I worked with the recipe until I had a pancake that was "healthy". The orginal recipe called for lard, sugar, salt, bleached flour, and whole milk. This recipe could be made with fewer calories, etc. by using 3 egg whites instead of 2 whole eggs.

Here is how you make Whole Wheat Oat w/fruit Pancakes:

Mix oats and milk in a bowl and let soak for 5 minutes. While oats are soaking place pan on stove under very low heat so it can warm. Mix together the flour and baking powder. Blend oats and milk . Add applesauce and blend. Add eggs to batter which you have blended to break them up. Add the fruit to the batter. You may add cinnamon and vanilla to taste. Increase heat under pan and spray pan with cooking spary. I usually use about 1/3 cup mix per pancake.
