4 strips of turkey bacon, cooked
Olive oil spray
1 cup fresh sliced mushrooms
2/3 cup onion, diced
1 cup Weight Watchers Mexican Four Cheese Blend
1/4 cup sundried tomatoes, chopped
4 eggs, lightly beaten
1 1/2 cups fat free half and half
1/4 tsp grated nutmeg
1/4 tsp salt or salt substitute
1/4 tsp black pepper

Here is how you make Ben's Egg Pie:

Preheat oven to 375 degrees.Line a pie plate with the crust. Crimp edges.Saute mushrooms and onions in olive oil spray on med high heat.Crumble the bacon and put in the bottom of the pie shell. Layer the sauteed mushrooms and onions, sundried tomatoes and 3/4 cup of the cheese on top of the bacon.Combine the eggs, half and half, nutmeg, and salt and pepper in a bowl and blend until well combined. Pour over the mixture in the pie crust.Bake the pie 45 minutes or until a knife inserted 1 inch from pastry edge comes out clean. Cut into eight wedges and serve immediately.
