4 slices bacon (used center cut)
1 large russet potato, peeled and cubed
8 large eggs (or 2 cups Egg Beaters)
1/2 tsp. salt and pepper
1/3 cup reduced fat sour cream
1/2 cup shredded Kraft 2% cheddar cheese
1/4 cup sliced jalapenos

Here is how you make Potato, Bacon and Sour Cream Frittata:

In 12" oven-proof skillet, cook bacon over medium-low heat until crispy. Preserve bacon fat for potato. Place on paper towels to absorb grease and cool, then crumble and set aside. In same pan with bacon fat, cook potato cubes over medium-high heat until browned and tender, about 5 minutes. Remove and let cool. In a bowl, beat eggs with salt and pepper; add reserved bacon and potato. Spray skillet with Pam and place skillet over medium heat. Add egg mixture, reduce heat to low and cook 6 minutes or until partially set. Drop in small amounts of sour cream throughout then top with cheese and jalapenos.
