Here is how you make Potato Frittata:

Preheat oven to 400F.In an ovenproof skillet, heat 1 tablespoon of olive oil over medium-high heat. Add potatoes and onion and saute until potato and onion are slightly browned. Reduce heat, cover the skillet, and cook until potato is tender, about 15 minutes. Mix in capers, and sprinkle with salt and pepper to taste. Remove potato and onion from skillet and wipe skillet clean.Heat skillet and spray with Pam. Put potato onion mixture back in skillet, then pour egg beaters over.
