Either move onions to a bowl or use second saute pan and cook potatoes until just tender. Combine all vegetables in the large saute pan. Add 1/2-1tsp of thyme.Add egg mixture and stir to combine. Make sure potatoes are evenly distributed. Put pan in oven and bake until mostly firm but still liquid on top. (If your pan has rubber handle, wrap in foil)Sprinkle Parmesan cheese on top and put under the broiler until golden.Can be cut into individual servings and reheated each morning for breakfast.
