Here is how you make Cheesy eggs and oven fried potatoes:

Heat oven to 425.Dice potatoes (I leave skin on b/c I like it - but you can remove if you prefer)Place on non-stick baking sheetAdd 1 Tbsp olive oil and toss potatoes in oilAdd minced garlic and toss evenlyPlace in oven and bake 20-30 minutes, or until browned and softened (check half way through and turn the potatoes). I also leave in broiler for about 1-2 minutes until thoroughly browned and slightly crispy.When potatoes are done, turn off oven but leave potatoes in while you make the eggs.Add onions to a non-stick skillet and saute until fragrant and translucent. Move onions to outside of skillet and add eggs and cook to your preference (I like them over medium). When the eggs are done, add the cheese evenly (1/4 C per 2 eggs). Serve eggs over potatoes with onions. Sometimes I add diced veggies (peppers, broccoli, mushrooms, etc.) and add to the potatoes.
