Here is how you make Light Fried Potatoes:

Preheat the oven to 400 degrees. Peel the potatoes, if you prefer them with skin you can leave it on, and dice into 3/4" to 1" cubes. Place potatoes in a mixing bowl. In a small bowl, combine the olive oil with the spices. Pour the olive oil and spice mixture over the potatoes and toss to coat. Spray a 13x9x2 pan with cooking spray. Arrange the potatoes on the cookie sheet in a single layer and bake at 400 degrees for 30 minutes or until browned to your liking. Serve immediately. Makes about 8 1/2 c servingsFor even more flavor I use smoked paprika and smoked sea salt in place of the regular version of these spices. I also substitute red potatoes if I have them on hand.
