Here is how you make RICE PUDDING:

Bring water and salt to a boil. Stir in rice. Cover; remove from heat and let stand 5 mintues. Blend milk and egg yolk together, then stir into rice. Add sweetener to taste, raisins, cinnamon, nutmeg and butter. Mix well and bring to a boil; stir constantly. Cover and remove from heat. Let stand 1 hour. Stir just before seving.
