Set aside.Heat the Extra Virgin Olive Oil in a pan over medium flame. add the onions, zucchini, red pepper flakes, and garlic. Cook until soft (about 4 minutes). Add the spinach and cook until wilted. Add the eggs and stir, scrambling the eggs into the veggies. Add the tomatoes and Feta Cheese.
