⅓ cup sugar
1 tbsp agave nectar or honey
1 tbsp vanilla extract
2 cups white bread flour
3 cups whole wheat bread flour

Here is how you make Sourdough Pain Noir:

In a large bowl, combine the starter, coffee, water, sugar, agave and vanilla. Stir in the flours and cocoa powder until well combined. Cover and let rest (autolyse) for 1 hour.Add the salt, oil, pecans, dates, cacao nibs and chocolate chips, mixing with your hands or the paddle on a stand mixer until incorporated. Cover your bowl with plastic wrap and a clean kitchen towel and let rise 1 hour. Stretch and fold the dough, re-cover and let rise 1 hour. Repeat stretch-and fold process, then cover and let rise undisturbed for about 4-6 hours, until almost doubled. Shape into a boule and place dough onto a sheet of parchment, cover with a bowl and let rise 4 hours (up to overnight), until 1 ? times its size.Place a cast-iron Dutch oven in the oven and heat to 400F. When heated, generously coat the inside of the Dutch oven with cooking spray. Uncover the boule and lower the loaf on the sheet of parchment into the pot.Bake (with the lid on) for 20 minutes, then remove the lid and bake an additional 40 minutes, until the internal temperature reads about 200 F.Remove the bread from the oven and cool in the pot for 10 minutes.
