Preheat oven to 375. Grease a muffin tin with Pam or other spray (not included in nutrition info)Heat the olive oil in a skillet over low heat. Add the garlic and saute for 3-4 minutes. Add onion and turn heat to medium high. Cook until the onion is translucent and browned but not burned, about 5-7 minutes. Add spinach and artichoke and cook until warm, about 4-5 minutes more.
