3 tablespoons all purpose flour
1 pound of baby spinach, lightly steamed and coarsely chopped.
1 tblsp of herbs de provence
2 tblsps of goat cheese crumbles
2 large egg yolks
Kosher salt and fresh ground pepper to taste (about 1/2 to 1/3 tsp)
6 large egg whites
Avocado watercress coulis (Recipe at the bottom).

Here is how you make Spinach and Her Souffle with Avocado, Arugula Coulis:

Preheat oven to 350. Spray a 2L casserole with non-fat spray, sprinkle parmesan to coat the dish. Heat the milk and onion spiked with cloves, or the milk, onion, and dash of ground cloves until warm, but do not allow the milk to boil. Cover and set aside for 10 minutes to infuse. Discard onion. In the meantime, if you haven't already lightly steam and chop spinach while infusing.Also in the meantime, beat the egg whites in a large bowl until stiff white peaks form. Melt light butter in medium saucepan. Add flour and whisk until blended, Whisk in milk, stirring constantly until thickened (about 1 minute) add herbs, spinach, goat cheese, add egg yolks one at a time, cook, stirring for another minute, add salt and pepper. Fold a quarter of spinach mixture into whites, fold in remaining spinach mixture. Pour into the prepared casserole dish. Bake for 40 minutes until souffle rises and is golden brown.
