3 cups of fresh spinach
1/2 cup pimentos (store bough glass jar in canned veggie section)
1/2 cup peices of Canadian bacon (I used pizza slice sizes and cut in 3rds) can add more if desired
1 medium onion chopped finely
1 tbs light butter
4 tbs grated Parmesan cheese for sprinkling (optional)
1 6oz package of fat free feta cheese

Here is how you make Canadian Bacon, Spinach and Feta Fritata:

Heat a medium sautee pan over med high heat. Add butter and onions and sautee. (About 3 min) Add in Spinach and Pimentos spice to taste (with salt and pepper) cook until spinach has reduced in size.set aside.in a bowl whisk eggs and milk (can add a few shakes of hot sauce)in a glass pie pan add the spinach mixture.add feta and chopped Canadian bacon - mix gently with hands.Pour the egg mixture over the ingredents in the glass pan.Preheat oven to 350.
