Cook onions over medium heat with lid for 3 minutes. Add mushrooms and cover for 2 minutes. Stir. Add spinach over top, cover, and cook 3 minutes. Stir and set aside.Spray 9X13 casserole dish with cooking spray. Place 6 slices of bread in bottom. Cover with half of veggies. Spread with cottage cheese.
