Add Feta Cheese to mixture.Heat oil in a non-stick pan, and saute onion & peppers until soft. Add spinach to mixture and cook until any moisture from the spinach is gone.Combine together with egg mixture. Add a little more oil to the pan if it looks too dry, and bring it to medium heat. Pour the egg mixture into the pan and cook for 3 minutes. Place the pan under the broiler with broil-high settings for 3 minutes to set the top side of the frittata. Personally, I like to transfer the frittata into a pie pan at this stage.
