When I want a spinach pizza...I make this. Very yummy, full of protein, calcium and magnesium (one of the hardest minerals to get into my diet). Use fresh raw spinach. What Are The Ingredients For Darla's Spinach quesadilla Recipe?The ingredients for Darla's Spinach quesadilla are: 2 - 8 inch flour tortilla wraps1 tbsp basil pesto sauce (drain the oil) 2 tsp hot sauce (or to taste) small wedge of Feta cheese (30 grams) 1.5 tbsp shreded Mozzarella cheese 1 tbsp grated Romano cheese 1 cup raw baby spinach (tightly packed cup) How Do I Make Darla's Spinach quesadilla?Here is how you make Darla's Spinach quesadilla: Pre-heat oven to 350. Spray non-stick pizza pan with Olive oil flavoured PAM. Place one tortilla onto the pan. Place the pesto sauce and hot sauce into the centre of the tortilla. Spread evenly over the tortilla using the back of a large spoon. Sprinkle with the oregano. Crumble the feta cheese, half of the mozzarella and all of the romano over this spread. Cover the cheeses with spinach leaves (this will make a mound, but try to keep it even). Sprinkle the rest of the mozzarella over the spinach. Cover with the second tortilla, pressing down on the top to flatten.Place in the hot oven for 5 minutes. Using a metal pancake turner, flatten the "pizza" again. Bake for another 5 to 7 minutes. Remove from oven and cover with a towel for 5 minutes. This will hold in the steam and soften the top tortilla. Leave out this step, if you like your tortilla crispy. Enjoy as a meal by itself or cut into four equal pieces to share with others. Mmmmm, tastey. This makes one meal or (if sharing) four servings (but you will need to add salad).
