Knead briefly then roll pastry out to line a 20cm flan dish. Freeze for 10 mins to chill then prebake for 10-15 mins.Heat oil in pan and cook onion until very soft. Stir in spinach and scatter mixture over prebaked pastry base. Sprinkle over feta and parmesan.
