5 large eggs
1/4 cup 2% Organic Milk
1/3 Yellow Bell Pepper, sliced thin
1 tblsp. Fresh chopped green onion (apx. 1 stem)
2 Medium size mushrooms, stems removed, sliced
2 cups Fresh Spinach leaves- Stems removed- tear leaves into smaller pieces if desired
1/2 medium tomato, chopped
1/2 cup - Shredded cheddar or Monterey Jack cheese
1 tsp. - Salt
1.5 tsp. - Pepper
1.5 tsp. - Cayenne
2 oz. - Jimmy Dean Sausage (maple or spicy)
2 tblsp. Olive Oil
2 tblsp. Butter


How Do I Make Sausage, Spinach and Veggie Fritatta?

Here is how you make Sausage, Spinach and Veggie Fritatta:

In medium bowl add eggs and milk lightly beating until all are mixed well. Add veggies, 1/4 cup cheese and seasoning- Coat bottom of medium size pan with Olive Oil- Brown sausage in pan breaking up into pieces until all sausage is cooked through- add sausage to egg mixture- In same pan, add butter melting and deglazing pan- Pour egg and sausage mixture into pan and cook for 10-15min. on Medium. Add last 1/4 cup of cheese to top of fritatta mixture. Pre-heat oven to 350- move pan from stove to oven and let cook for another 20 minutes. (If center of Fritatta is not cooked completely through, after removing from oven, flip fritatta over in pan and let cook for 2-3 minutes on stove once more-)Flip fritatta onto plate and serve.
